La Petite Maison's Bikini – The Method

WThis is a simplified interpretation of a cocktail found on a new drinks list. It's a large-volume premix that's packed with the tastes of a festive period, making it excellent for hosting a festive gathering. Reserve the remaining syrup for breakfast cocktails, sweets, or to mix additional servings of bikinis.

The Bikini Cocktail

Makes enough for 10 people

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Place the listed components in a pot, bring to a simmer, mixing until the sugar dissolves. Next, turn off the burner and leave to cool down entirely. Pour to a sealable bottle, close it and refrigerate it in the fridge, it will last for about one month.

For the Cocktail Base: Pour the specified liquids into one large bottle, let it rest for an hour, then pass it through best through cheesecloth, so it's fully clarified.

To serve: Pour 85ml of the premix to a stirring glass containing ice, and stir lightly for a minute to chill. Strain to a cold coupe glass or a similar vessel, top with a few cranberries and finish using a brief mist of mandarin oil over the top.
